Independent Shropshire brewer Joule’s Brewery has announced plans to transform its Birmingham canalside pub, Waterside Tap, into Gas Street Vaults.
The venue, acquired after the closure of Bistrot Pierre, has operated as Waterside Tap for the past year while Joule’s assessed the historic building and its role within the local community. During that time, landlords George and Tori established the pub under the Joule’s brand before moving on to open The Red Lion, Jewellery Quarter, on the 14th July 2026.
Gas Street Vaults will celebrate the building’s industrial heritage, taking its name from the former Birmingham Canal Company offices and the original vaults where canal tolls were once collected. Rather than major structural changes, the refurbishment will focus on restoring the building’s character, with a central bar, traditional pub spaces and interiors inspired by Birmingham’s Victorian taverns.

Alongside Joule’s award-winning beers, the pub will offer classic British dishes, Sunday roasts and seasonal menus. The brewery will also recruit a new managed-house team across management, kitchen and front-of-house roles.

Spending the past year in the building has given us the confidence to move forward and create the pub we always believed it could become. We’re incredibly grateful to George and Tori for everything they’ve done over the past year. They’ve helped us establish ourselves in Birmingham and we’re delighted to see them begin their next chapter at The Red Lion, Jewellery Quarter. Now it’s our turn to begin the next chapter for this wonderful building.”

Work is set to begin in the coming months, with Gas Street Vaults expected to open in early 2027. Joule’s says it will share regular updates throughout the redevelopment.
